Meatloaf
1 egg, beaten
3/4 cup milk
1 cup Cheddar cheese, shredded
1/2 cup quick cooking oats
1 tsp. salt
1 pound ground beef
Topping:
2/3 cup ketchup
1/4 cup brown sugar
1 1/2 tsp. yellow mustard
Combine first 6 ingredients. (This is where you can play around with it. Sometimes I add chopped peppers or onions depending on what I feel like that night.) Press into a loaf pan or divide into 12 muffin tins for Mini Meatloves.
Combine topping ingredients and spread over the top. Bake in a 350 degree oven for about 1 hour (30 minutes for muffins) or until juices run clear.
Magic Muffins
1 1/4 cup flour
3/4 cup Malt-O-Meal (Farina)
1/2 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
3/4 cup milk
1/4 cup vegetable oil
1 egg
Preheat oven to 400 degrees. Combine all ingredients in a large mixing bowl; stir until all ingredients are moistened. Fill greased muffin cups 3/4 full. (makes 8-10). Bake 15-18 minutes. Great served with butter and a little honey.
